Chapter 7 - Development and Acceptability of Malunggay-Based Products for improving Students' Health by: Rafael M. Carlos III

Malnutrition remains a significant global issue, particularly in developing countries, affecting children's growth and overall health. In the Philippines, undernutrition among young students continues to be a problem, despite various government efforts to improve nutritional programs. This study aims to address this problem by developing malunggay-based products to provide a nutritional alternative for young learners. This research evaluated the acceptability of malunggay-infused cookies through sensory evaluation. Results showed that the product was generally acceptable in terms of taste, aroma, texture, appearance, and feasibility. According to the National Farm to School Network (2023), incorporating locally produced, farm-fresh foods into school meals can enhance students' nutrition and support local economies. Similarly, initiatives like Indonesia's nationwide program to provide free lunches for school children aim to improve child nutrition and stimulate local economies (Paddock, 2023). While the findings indicate potential supplementary solutions to undernutrition, further studies are necessary to assess the long-term health impacts of regularly consuming these products.
